Kitchen thermometers come in several forms that measure different things, and using the wrong type produces confident, wrong answers. The distinction is straightforward once the mechanism is clear.
What Each One Measures
A probe thermometer measures the temperature of whatever the tip is touching. Inserted into meat, it reports the internal temperature at that point.
An infrared thermometer measures the radiation emitted by a surface and calculates its temperature. It reports the surface only, and it cannot see inside anything.
This is the entire distinction and the source of most misuse. Pointing an infrared thermometer at a roast tells you how hot the crust is and nothing about whether the meat is cooked. Ranges listing both types alongside each other, such as Escali, treat them as complementary tools rather than alternatives.
Where Infrared Is the Right Choice
- Pan and griddle temperature before searing
- Oil temperature for frying, measured without contact
- Oven surface and stone temperature for pizza
- Checking a grill surface across its area for hot spots
- Chilled cabinet and surface checks where contact is undesirable
Where Probes Are Essential
Anything where doneness or food safety depends on the internal temperature: roasts, poultry, joints, bread, custards, confectionery. There is no substitute.
Leave-in probes with an external display are particularly useful for long cooks, since the oven stays closed and an alarm sounds at the target temperature. Instant-read probes suit quick cooking where the reading is taken and the probe removed.
Infrared Accuracy Caveats
Infrared readings depend on surface emissivity, which varies by material. Shiny metal surfaces reflect radiation and give readings that can be substantially wrong, sometimes by tens of degrees.
The practical implication is that infrared works well on food, oil, dark pans and stone, and poorly on polished stainless steel or aluminium. A stainless pan reads far cooler than it is.
Distance also matters. These devices measure an area that grows with distance, so a reading taken from across the kitchen averages a large patch including whatever surrounds the target.
Combination Tools
Some devices offer both an infrared sensor and a fold-out or plug-in probe, which covers surface and internal measurement in one tool. For a home kitchen that is a sensible consolidation, since the two functions are rarely needed simultaneously.
Checking Accuracy
Probes can be checked in ice water, which should read zero degrees, and in boiling water, which should read a hundred at sea level. Many models have a calibration adjustment.
Infrared devices are harder to check at home. Comparing a reading against a probe in the same substance, such as a pan of oil, gives a rough indication, though the surface and bulk temperatures will differ genuinely.
